Blending eaux-de-vie of different ages and from different Crus is like creating a genuine masterpiece, just like a painter or musician. And it is the Cellar Master who achieves this by closely watching each eau-de-vie in their oak barrels and tasting them regularly. Indeed, blending is like conducting a symphony orchestra, with each eau-de-vie offering a different aromatic note. Our Cellar Master, Pierrette Trichet, and her dedicated tasting team carefully select every eau-de-vie for each specific cognac. Before bottling, Pierrette Trichet and her team blend these eaux-de-vie together to harmoniously bond in a process known affectionately as ‘le mariage’. At Rémy Martin, we have a true treasure in our cellars – precious reserves of Fine Champagne eaux-de-vie, which represent 115 years of the vignerons’ craft.
