Time and talent are needed to reveal the true heart of cognac. Fine Champagne Cognac is cognac from Grande Champagne and Petite Champagne, made with 50% Grande Champagne. The eaux-de-vie from these regions have the greatest aging potential and are therefore treasured more.

Without grapes, one cannot make cognac. They are the heart of cognac as they offer aromatic superiority over other raw materials like barley for whiskies and corn for vodkas. As a result, the grape varieties used in the production of Rémy Martin are exclusively selected, such as Ugni Blanc (97%) and Colombard, Folle Blanche (3%). These are harvested in early October, then gently pressed. The resulting juice is left to ferment for 5-7 days, making a 7-9% white wine, perfect for distillation.
